Anzac Quinoa Crunch biscuits

Ingredients

  • 1 Cup Oats
  • ½ Cup Quinoa Flakes
  • 1 Cup Oat Flour (process oats til fine meal)
  • 1/3 Cup Shredded Coconut
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 2 tbsp Coconut Nectar
  • 3 tbsp Rice syrup
  • 3 Tbsp Coconut oil
  • 2 Tbsp Coconut butter
  • 2 tbsp Grapeseed oil
  • 1-2 tbsp warm water
  • 1 tbsp Vanilla extract

Oven at 170. Mix dry ingredients in a large bowl. Heat coconut oil gently in a small pan with coconut butter, add syrup, stir to combine til all liquid. Mix all ingredients to dry ones til a sticky dough forms, add water as required and carefully make patties with tbsp of dough. Flatten onto lined baking sheet, pressing firmly to keep mixture together, trying to keep edges blunt and spacing 2 inches apart, they will spread. Bake for 10-15 minutes, watching carefully that the edges don’t catch.
