Perfect excuse to use up too many bananas. These tasty morsels are a one bowl wonder. And great energy boosts full of almonds and quinoa flakes. Omega brain food and minerals galore. Topped with delicious jam they can work perfectly for breakfast, snacks or pudding! And you’ll rustle them up in minutes.
- 3 Bananas
- 2 tbsp almond Butter
- 1 tbsp maple syrup
- ¼ cup slivered Almonds, roughly chopped
- 1 Cup oats
- ¼ cup Quinoa Flakes
- 1 tsp vanilla extract
- Jam to top (try making my Simple Chia Berry Jam for a fruity wonder)
Turn the oven on at 180C.
Mash Bananas well, and whisk together with maple syrup, vanilla and almond butter until well combined. Fold in the oats, quinoa, salt and almonds, until a thick mixture forms.
On a lined baking sheet place round heaped teaspoonfuls an inch apart. Using the back of the spoon, or your thumb, make indents in the top and place a dollop of jam in the hollow.
Bake at 180 for 15-20 minutes until golden brown and firm to touch. They will harden up as they cool, but they are chewy not crunchy.
