Berry Chia Sundaes

This is a lovely fast weekday or weekend breakfast.
Stick it in the fridge first thing, or the night before and it’s ready to go in the morning. It’s
an amazing powerhouse of goodness that tastes fabulous.
Creamy, fruity and strawberry sweet. Chia seeds are a godsend.
High in Omega3 fatty acids, calcium, magnesium and fibre they are
a great fuel and perfect brain boosting and bone growing food for
little ones, with blood sugar stabilising goodness too. My toddler
guzzles this down. So make lots.

Ingredients

  • 2 tbsp chia seeds
  • small pot Coconut yoghurt
  • 1 tsp vanilla extract
  • 1 optional tbsp maple syrup
  • ¼ cup almond milk
  • To serve: 2 seasonal berries strawberries, blackberries
  • Handful sliced almonds

Stir together in a jar and place in fridge for an hour or over night.

To assemble layer with sliced strawberries and flaked almonds.

    work leaving the yoghurt out altogether?
