Carrot Cake Bombs

Ingredients

  • 1 Carrot grated
  • 1 Cup Walnuts
  • 1 Cup Pecans
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp  ground ginger
  • Pinch Sea Salt
  • 4-5 Medjool Dates
  • 1 – 2 tbsp almond butter
  • 1 tsp vanilla

 

All the taste and flavour of a gooey, nutty carrot cake without the baking, or the bags of sugar. A little bit of sweet, but only a hint, and with so many flavours and fresh carrot you don’t need tons of any sweetener. Proper protein energy kick to keep everyone from afternoon or midmorning slumps.

Method

Blitz nuts with spices and salt in food processor, til a fine meal – about 1-2 minutes, but stop before they turn into butter! Add dates and carrots and pulse til darker and combined. Add vanilla and almond butter and pulse carefully. If not forming a ball add a small amount of water until a sticky ball comes together. Roll into balls and freeze.

  2. I’ve just put these in the freezer. Had a little taste beforehand of course and they are so delicious! I’m surprised how sweet they actually are (which is a good thing given my sweet tooth) and how much they taste like the cake. My daughter and even my husband loved them. Thanks x

  3. Just made these today. They are Moreish. Sweet, very nutty with very subtle taste of carrots. I used 2 medium carrots and 6 medjool dates. Perfect. Ingredient lists ginger, but this should be ground ginger. I had a medium sized processor, but due to the amount of nuts involved, best to use a big processor. This makes a fabulous treat when you want a sugar rush. Great with a cuppa tea. Love it. Thank you.

      So glad they went down well. I use the smallest bowl of my food processor no problem, but do whatever works best! You can use fresh or ground ginger here, the fresh ginger is stronger though. It is a great treat, ad I’m glad you liked them, but they’re not for a sugar rush, a sweet treat!

  4. Hi, Lizzie! Wanted to make these fab carrot balls, but had a question. Do you soak your nuts? I prefer to soak them, will they still work fine in this recipe?
