The fastest, simplest and most efficient way of getting a massive amount of cauliflower into your kids! Smothered in cheese or boiled into an inch of its life, cauliflower has had a rough ride. But this is a delicious treat that everyone will gobble up and it’s packed with goodness.
- 1 Cauliflower
- 1 leek
- 2 tbsp Olive oil
- Sea salt and pepper
- Sprinkle of ground cumin
Break the cauliflower into the big bowl of a magimix, and pulse for 20-30 seconds until it resembles rice like consistency.
In a large saute pan heat the oil and add the sliced leek with some salt. After 5 minutes add the cauliflower and cook stirring a couple of times for a minute or so. Add 3-4 tbsp boiling water and place a lid almost totally covering it. Cook on a medium high heat for another 3 minutes until there are brownish edges and it feels soft.
Serve as a side with chicken, fish etc Or add a kaleidoscope of vegetables and eat as a main.
