Chocolate Peanut Butter Bars

These were born from a serious jet-lagged craving for a peanut and dark chocolate combo after being introduced to these amazing Kind bars when in the States recently.

When you really need something it seems to work, as these turned out crunchy, chewy in the middle and so tasty, first time round.

Full of peanut butter for a great energy hit, and with some whole grains for minerals and that dark chocolate for everything. All my family hoovered these up. Hope you like them.

Ingredients

  • ½ Cup crunchy peanut butter
  • ¼ cup cacao butter
  • 4 tbsp rice syrup
  • 1 tbsp vanilla extract
  • 1 tbsp oat milk (or milk of choice)
  • 1 Cup puffed rice
  • ½ cup puffed quinoa
  • ¼ cup buckwheat groats
  • 120g Dark chocolate over 70% (or homemade with cacao powder, coconut oil and maple syrup as in other recipes on site)
  • 1 tbsp coconut oil

In a saucepan gently heat the peanut butter with the cacao butter, stirring until melted and runny. Add the rice syrup, vanilla and a pinch of sea salt.

Pour in the dry ingredients, not the chocolate, and stir to combine.

Line a small square baking tray and pour the mixture in, patting it down firmly into the corners with a spatula. Place in the freezer while you melt the chocolate.

Place the chocolate with the coconut oil into a bain-marie (bowl over a pan of simmering water) until melted and then pour over the chilled peanut mixture, tipping and trickling the chocolate until an even cover is formed. Place back in the freezer and leave to chill. Cut into bars. Store in fridge or freezer.
