Party food, comfort food, and just the best bubbling tray of cheesy goodness to pull out of the oven. Its got a whole load of veg in there too as a bonus.
- 1 small cauliflower
- 500g macaroni
- 250g mascarpone
- 120g parmesan
- 200g mozzarella
- 100g cheddar
- Salt and pepper
Turn the oven to 190.
Blitz the cauliflower in a processor to rice like texture.
Cook the pasta as the packet tells you, with 3 minutes less than cooking time as your timer. Add the cauliflower and cook for a remains one minute, then drain.
As the pasta cooks, in a medium saucepan heat the mascarpone and cheddar on low, to slowly melt, then set aside.
Butter a large casserole dish, approx 20″ x 15″ and tip the drained pasta and cauliflower in. Pour over the melted cheese sauce, dot with torn mozzarella pieces, embedding them within the pasta. Sprinke with the parmesan and bake for 20 minutes until golden on top.
Serve right away.
