Summer Pudding Overnight Oats

Ingredients

  • 80g rolled oats
  • 250 ml (1 Cup) almond milk
  • 2 tbsp chia seeds
  • 20 g almond flakes
  • 2 tbsp hemp seeds
  • 2 tbsp coconut yoghurt
  • 1-2 tbsp maple syrup to taste
  • Handful mixed summer berries
  • 4 tbsp berry chia jam http://lizzieloveshealthy.com/simple-berry-chia-jam/
  • Pinch Sea salt

Place everything but the jam and berries into a 500 ml container ad stir together thoroughly. Adjust sweetness according to taste. Cover with a lid and leave in the fridge overnight.

Use a few clean jam jars or glasses to serve, swirl through half of the jam into the oat mixture. Spoon a layer of jam into the bottom of the glasses then a spoonful of the oats, some berries then oats. Layer all the way up and top with a dollop of jam and a few almond slivers. Serve!
